Meet the Star Chef — Amine Ennoura Amine Ennoura is the Head Chef at Romulus, bringing a world of flavour and creativity to every plate. Born in Marrakesh, Morocco, into a family deeply rooted in culinary tradition and hospitality, Amine moved to Italy at the age of 8. His passion for cooking became a lifelong journey that led him through Italy, Switzerland, New Zealand, and now Australia. Along the way, Amine trained under Michelin-starred chefs and was a finalist on two international culinary TV shows, one in Switzerland and another in Saudi Arabia. Known for his bold flavour combinations, artisanal techniques, and dedication to local ingredients, Amine’s cooking style is both refined and daring—celebrating heritage while embracing innovation. |
